Sarah's Chicken Curry
1/2 cup soy sauce
1/2
cup vinegar (white wine or balsamic)

Dump
all in a pot and simmer ‘til done. Add veggies (asparagus, broccoli, maybe
peppers?) about 15 minutes before done-ness.

First question: What's a good "simmer 'til done" time?
Second question: What veg would work best? I remember asparagus doing well, but I'm not sure about broccoli. I'm finding it harder to handle some peppers now. I figure some garlic instead of garlic powder. What about cauliflower? Carrots? Cabbage or kale? What fun veg haven't I considered?

A bit of onion (either a small onion sliced/diced or several green onions). Green peppers are good. Carrots? (shredded or sliced thin). Parsnips or turnips. A good test for simmer til done is to check the softness of the peppers or onions.
Well, the recipe already calls for two onions, and I remember that being a good amount. Not sure I can handle the peppers (ah, age!). But parsnips or turnips are a definite possiblity!
What about rutabagas? They're supposed to be good for Ken (and his lack of spleen). I've never cooked a rutabaga before....
Fresh garlic. Chicken broth (low sodium ) instead of water. Partially pre cook the chicken the browned bits add flavor. Low sodium soy sauce.
I think cauliflower, asparagus, snow peas, water chestnuts or bamboo shoots for crunch.
It all depends on how crisp/mushy you like your veg (5 min, to well... mush, ) as previously suggested, test toughest veg to see if soft enough for you. , Brocoli, mushrooms, carrots <-fine slice or shredded, Bok Choy would be amazing... bean sprouts are always good as a last minute addition to anything curry-ish.
I know you dont do mushrooms (which are my standard "bulker" but pretty much any veg works in a curry. Courgettes (zucchini for you Americans) so long as you don't add them at the same time as the roor veg unless you want mush.
A bag of frozen mixed veg - throw in a couple of handsful 10 minutes before serving.
